A blend of 25% Riesling, 20% Chasselas, 15% Pinot Gris, 5% Pinot Blanc, 5% Auxerrois, 5% Muscat and 5% Gewurztraminer from young vines grown biodynamically, and planted on the Clos des Capucins vineyard site on sandy-silty soils over gravel and granite pebbles. Certified organic by Ecocert and biodynamic by Demeter. The Clos is situated at the bottom of the slope, well protected from wind by the surrounding hills. The grapes are picked by hand at maturity, followed by gentle pressing to preserve the fruit, fermentation in stainless steel vats with indigenous yeasts, and maturation in large casks.
