A blend of Pinot Gris, Pinot Blanc and Auxerrois from vines farmed biodynamically and planted on sandy-silty soils over granite pebbles. Certified organic by Ecocert and biodynamic by Demeter. The grapes are harvested by hand when ripe and vinified with respect: slow and gentle pressing to preserve the fruit, fermentation with indigenous yeasts, and maturation for 8 months in large casks without stirring. As the bottle indicates, this is the estate’s “Natural Test #1”, meaning only a micro-dose of sulphur was added at bottling.
