Pinot Gris from vines grown biodynamically and planted on sandy-silty soils over gravel and granite pebbles. Certified organic by Ecocert and biodynamic by Demeter. The Clos des Capucins is a vineyard site situated at the bottom of the slope, well protected from the wind by the surrounding hills. The grape bunches were harvested by hand when ripe on the 17th of September 2018. Respectful vinification: slow and gentle pressing, indigenous yeasts, maturation on fine lees for 8 months in large casks, without stirring.
