100% Pinot Noir from old vines farmed biodynamically and planted on sandy soils over a granite bedrock, halfway up the Schlossberg hillside. The grapes are harvested by hand picked at maturity, then vinified with respect: one week of cold maceration, 10 days of fermentation with indigenous yeasts, 12 months of ageing in barrels, with 15% new oak.
