From 35-year-old vines, planted on loamy-limestone soils, farmed organically and according to biodynamic principles. The vines are classified as Grand Cru Steiner but it doesn't appear on the bottle since Jean doesn't make wines that would pass the agreement, acoording to the board. Vinification: 4 weeks of maceration, harvested whole bunch, fermentation in large oak barrels, matured its on lees 12 months, without sulphur, unfiltered.
