A 100% Sylvaner cuvée made from 15-years-old vines farmed biodynamically and planted on sandy soils over granite bedrock. Certified organic by Ecocert and biodynamic by Demeter. The grapes were picked by hand at maturity starting the 28th of September 2018, followed by a respectful vinification: a slow and gentle pressing to preserve the fruit, fermentation with indigenous yeasts and maturation for 8 months on fine lees in large casks, without stirring.
