100% Sangiovese, from 25-year-old ungrafted vines, selected directly from the Brunello region in Italy. Red clay soils over sandstone. The exposure of the vineyard and humidity of the ocean give this cuvée its unique personality. Cultivated organically and biodynamically, with zero chemicals... Harvested early and by hand. Vinification is natural and unadulterated: the grapes are de-stemmed, followed by fermentation and maturation on skins in closed barrels for 8 (!) months. Bottled without fining or filtration, and as always, ZERO sulphur.
