Blend: 45% Sauvignon Blanc, 30% Pinot Blanc and 25% Pinot Gris, with all three grape varieties from vines farmed biodynamically and planted in the small town of Totness, southeast of Adelaide. Vinification: The Sauvignon is destemmed and ferments on its skins for a week, then is pressed and matured in ceramic eggs. At bottling, it is blended with the Pinots Gris and Blancs, which have been matured in barrels that have seen several wines. Neither fined nor filtered, and no added sulphites.
