A cuvée of Gamay, from 15 to 110-year-old vines, facing south, and situated in Volvic at 420 metres altitude, planted on a sandy feldspar terroir. From a parcel certified organic by ECOCERT and farmed in keeping with the fundamentals of biodynamics for the last 10 years. Grapes are harvested by hand using small crates. Vinification: whole bunches in two fiberglass vats. First vat: after treading to make room, whole bunches are macerated in the juice. Second vat: carbonic maceration. Next, the grapes are pressed and the two vats are blended, as are the free-run and press wines. Duration of maceration: 3 weeks. Maturation: 50% vats and 50% barrels for 8 months. ZERO additives from harvest to bottling, it's PUR nature.
