A cuvée of Gamay, from 50-year-old vines, facing southeast, and situated in Volvic at 500 metres altitude (hold on to your oxygen mask), and planted on a sandy granite terroir. From a parcel certified organic by ECOCERT and farmed in keeping with the fundamentals of biodynamics for the last 10 years. Grapes are harvested by hand using small crates. Yield: 25 hl/ha. Vinification: whole bunches in fiberglass vats, treading, 4 cap punches. Transfer from vats followed from pressing, blending of free-run and press wines. Duration of maceration: 3 weeks. Maturation: 50% in vats and 50% in barrels for 8 months. ZERO additives from harvest to bottling.
