Gamay from vines grown on volcanic soils known as the Pierre Bleue de Brouilly (blue stone of Brouilly), facing north. Living soils, ploughed and worked by hand without chemistry or weedkillers. Grapes harvested by hand, and handled with respect to preserve the indigenous yeasts. Natural vinification, carbonic maceration of 80% whole bunches and 20% destemmed: 10-20 days depending on the vintage. Alcoholic fermentation in barrels and maturation for 10 months. No filtration. 1 g/hl of sulphur at bottling, which is to say almost nothing. Certified organic.

Jean-Claude Lapalu est un vigneron proche de la nature, installé depuis 1996 dans la côte de Brouilly. Le domaine compte 9 ha, certifié bio mais ce label ne figure pas sur les bouteilles. Peu de soufre à la mise, on est ici à 1 g/hl.
