A 100% Viognier cuvée, from vines farmed organically. The grapes are purchased from the Côteaux du Lyonnais, located in the town of Bully. Vinification is natural and without any additives: whole grape bunches, 15 days of maceration in stainless steel vats – this is an example of a pure carbonic maceration – followed by gentle pressing then transfer to barrels for the end of fermentation. No settling, 9 months of maturation on lees. Bottled without fining or filtration, and ZERO sulphur!
Jonathan Purcell is a young Californian winemaker fast gaining renown as the next rising star of Beaujolais.
