100% Gamay from vines farmed organically and with basic biodynamic principles. A cuvée produced from grapes purchased from the Romany family, based in Bully. Vinification is natural and without any additives: whole grapes bunches, 17 days of maceration, four sessions of treading (real foot-treading, says Jonathan, when you put your whole body into it!) over four consecutive days, gentle pressing, transfer into barrels that have seen several wines for the end of fermentation and maturation.
