100% Gamay from biodynamic vines planted in 1990 on siliceous soils, a rather dry terroir at the top of a hill, in the Beaujolais. Manual harvest. In the cellar: direct pressing, start of vinification in stainless steel vats without temperature control, one racking then bottled by gravity with residual sugars to create the effervescence in the bottle. Not disgorged, not fined, not filtered, no added sulfites.
