A Chardonnay from vines planted by massal selection, grown on loamy clay-limestone soils, rich in silica, over a slab of pearly stone called Aragonite, leaving almost no soil between 5 and 50 cm. From a parcel planted in 1936, 1955 and 1970. The estate was certified organic in 1954 and biodynamic in 1998. Yield is around 30 hl/ha. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: slow pressing: 6 hours. Fermentation in 600-litre demi-muid barrels, matured on lees for 12 months + 3 months in vats, followed by light filtering... Zero sulphur added.
