100% Chardonnay, from 35-year-old vines, 80% from the commune of Volnay and the rest from Corpeau. The cuvée Bigotes takes its name from the first vines Fred acquired, situated in Corpeau behind the church there. Ecologically respectful viticulture, natural winemaking: vinified with whole bunches, direct pressing, fermentation and maturation 10 months in barrels, 10% new oak. Zero sulphur added.
Frédéric Cossard and his partner Laure founded their estate in 2006, while also beginning to buy grapes from multiple historic appellations: Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée, and even the Jura and Beaujolais.
