Bourgogne - 2018 - Valentin Montanet

A cuvée of Pinot Noir from 45-year-old vines farmed organically and planted on light soils of red clay and pebbles, in the communes of Blanot (71) and St Père (89). The grapes are harvested by hand, with careful sorting in the vineyard. Vinification: the grapes – half whole cluster and half destemmed – are fermented in vats, with a few cap punch downs, followed by blending of free run and press wines. Matured 10 months, 50% in barrels and 50% in vats. Neither fined nor filtered, and a micro-dose of sulphur at bottling.
