100% Chardonnay coming from several parcels in the communes of Uchizy and Peronne, the vines are 55 years old and certified organic. Vinification: direct pressing, natural clarification by gravity, no unnecessary interventions, no additives, no commercials yeasts, and fermentation in stainless steel vats. Maturation on lees for 10 months, light earth filtration, a pinch of sulfites at bottling, and zero during vinification.
