100% Chardonnay, from the parcel known as En Méchalot – a parcel classified for making Rosé Marsannay. These were young vines in 2010, vinified here as a white wine, thus Sylvain gives up the Marsannay appellation to make a Bourgogne blanc (white Burgundy). Direct, manual pressing for 5-6 hours of whole bunches in a very old vertical press. Moved to barrels mid-fermentation, matured 18 months in barrels on its lees, with 15% new oak, blended then matured an additional month in vats, with a light filtration at the end. 1 gram of sulphur added at bottling.
Sylvain Pataille, a fortysomething vigneron in Marsannay, is undoubtedly one of the most exciting revelations of this area in recent times.
