100% Pinot Noir made from 40-year-old vines cultivated organically and planted on the parcels bordering the Pommard Villages appellation. Brown soils, ploughed in order to encourage deep rooting. The grapes are harvested by hand, with tightly controlled yields, strict sorting of the bunches. Vinification in whole bunches, fermentation at low temperatures, frequent punching of the cap and pumping over, a post-fermentation carbonic maceration, and 21 months maturation in oak barrels, a third of which are new. Neither fined nor filtered.

The Domaine de Courcel encompasses 10.5 ha of vines in the commune of Pommard.
