100% Pinot Noir from the Chapitre parcel in the commune of Chenôve just outside of Dijon. Planted with 40-90-year old vines, grown on hillsides with a limestone bedrock and gravel on the surface. A parcel that enjoys a solid reputation, and is also a source of fascination for fellow Burgundian Jean-Yves Bizot (of Vosne-Romanée fame). Vinification: 100% whole bunches, 3 weeks in vats, zero additives. Matured 20 months in 3-10 year-old barrels, blended then matured an additional 3 months in vats, with a light filtration at the end. 1 gram of sulphur added at bottling.
Sylvain Pataille, a fortysomething vigneron in Marsannay, is undoubtedly one of the most exciting revelations of this area in recent times.
