100% Chardonnay, from a south-facing parcel of vines, planted on red clay soils, east of Chablis. The estate is certified organic and biodynamic. Hand-picked, late harvested grapes, long fermentation on fine lees in barrels, without bâtonnage. Matured 11 months in old 225-litre barrels. A microdose of sulphur at bottling.With the De Moors, the intentions are good, and the result is extraordinary.
