100% Chardonnay, from 55-year-old vines farmed organically and planted on parcels of clay-limestone soils, facing southeast. The grapes are harvested by hand when ripe, followed by direct pressing, natural settling by gravity, alcoholic fermentation in stainless steel vats, with indigenous yeasts, then 9 months of maturation, half in 27-hectolitre stainless steel vats and half in 350-litre barrels that have seen four wines. Light diatomaceous earth filtration, and a microdose of sulphur before bottling, with zero sulphur during vinification.
Valentin Montanet and his parents Jean and Catherine are vignerons without any pretention... but who should be taken very seriously.
