100% Chardonnay, from a vineyard converted to organics in 2005 and certified since 2009. Regarding viticulture, Thomas works to attain high levels of ripeness in his grapes. What results are rich wines, always with powerful fruit and immense purity, offering the finest expression of the minerality and saline qualities that make great Chablis. Vinification: direct pressing, this is the second bottling of the vintage so almost two years of aging in vats, little sulfur at bottling.
Thomas Pico, 35 years old, is a vigneron on the rise in Chablis. His wines are almost impossible to find, unsurprising given that his estate, "Domaine de bois d’Yves", is composed of only 3 hectares of family land.
