A great deal of freshness and tension, very mineral, with a saline finish... An ideal way to start the meal! We’ve sold the same with for 3 vintages, but each year, the ageing time in stacks has increased from 15 to 24 to 36 months. A masterful maturation.

This is the 2014 vintage. A blended cuvée of 50% Pinot Noir and 50% Chardonnay, all from a parcel known as Les Justes Monts, of 30-year-old vines, facing north, grown on a very clayey soil. Estate certified organic. Vinification: direct pressing, matured on its lees 36 months in stacks, with a dosage of 3 grams/litre, making this an extra-brut. Sensible sulphite use.

Edouard Lepesme a travaillé jusqu'en 2010 dans le négoce du vin puis, en 2011, il décide de faire la formation viti-oeno à Beaune, une des formations les plus complètes pour devenir vigneron. Diplôme en poche, il part travailler à Chablis chez (tiens, tiens!) Thomas Pico, Alice & Olivier De Moor puis en Côte de Nuits chez Claire Naudin, s'ajoute Rudi Bauer en Nouvelle-Zélande...
