100% Pinot Noir from a 60-are parcel of 35-year-old vines, planted by massal selection at the Les Châtaigniers vineyard site in Saint Aubin, on red soil. Yield 48 hl/ha. Cultivated biodynamically, with ploughing of the soil, no chemicals, and harvesting by hand in small crates. Vinification: whole grape bunches, wooden vats, light extraction, some pumping over, a little cap punching, and 15 months maturation on the lees in 3-year-old barrels. Neither filtered, nor fined, and just a micro dose of sulphur at bottling.
