Pinot Noir from the commune of Meuilley, grown on a slope of clay-limestone and white silt soils, facing south. Certified biodynamic since 1985. Harvested by hand and 100% destemmed. Fermentation is done in open wooden vats, followed by 23 days in cuves. The extraction of flavours, tannins, and colour is natural (not the result of added enzymes or thermovinification), achieved by pumping over the must and punching the cap. The vatting period lasts 21 days. Then the wines from the first and later pressings are blended, allowed to settle and moved to barrels. An 11-month maturation takes place in barrels which have seen three wines.
