100% Aligoté from biodynamic vineyards. Hand harvested, the whole bunches are sorted manually at the winery. Vinification: during 6 months, the grapes are placed in terracotta jars made in Tuscany. The jars are closed, Pierre does not touch his grapes during the maceration. Soft pressing in a small manual press, blending of the free-run juice with only 1% of the press juice, 10 days in stainless steel vats. Bottled by gravity without fining or filtration, no added sulfite.
