A blend of 60% Gamay à petits grains, 25% Pinot Noir and 15% Muscat Chardonnay. Vines from several parcels located in the Hautes Côtes de Beaune. Yield 38 hl/ha. Cultivated biodynamically, with ploughing of the soil, no chemicals, and harvesting by hand in small crates. Vinification: whole grape bunches, carbonic maceration (in closed wooden vats), and 15 months maturation on the lees. Neither filtered, nor fined, and zero sulphur at bottling.
