A Pinot Noir from the vineyard parcel “Les Crays”, a micro parcel of just 40 ares of chalky soils, planted with 40-year old vines. The estate was certified organic in 1954 and biodynamic in 1998. Yields, around 30 hl/ha. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: fermentation of whole bunches, maceration for 8 days in open vats, transferred to barrels and matured 12 months, with no filtration, and no sulphur (like all the estate’s reds).
Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001. Founded in 1952 by his grandfather Pierre, the Clos has never seen the use of chemicals, and has always been cultivated with the greatest respect for the earth.
