100% Pinot Noir from vines farmed biodynamically and planted on a parcel located at the top of a slope of clayey-limestone and silty soil in Beaune, facing the rising sun, on the edge of Pommard, and bordering a forest. Lulunne is the name of a stream whose source is located under this vine parcel. The grapes are harvested by hand of course, followed by fermentation in open wooden vats for 21 days, some pumping over and traditional punching down of the cap. Next comes the blending of free-run and first press wines, settling and racking. Matured for 12 months in barrels that have seen several wines. Decanting is recommended.
Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court – a conviction he successfully appealed and overturned.
