100% Pinot Noir, primarily from the very lovely parcel Clos du Roy, in the northern reaches of the AOC, just outside of Dijon. The vines are between 15 and 60 years old, planted on very loose soils. Vinification: 80% whole bunches, 20% destemmed, 3 weeks in vats, zero additives. Matured 18 months in 3-10 year-old barrels, blended then matured an additional month in vats, with a light filtration at the end. 1 gram of sulphur added at bottling.

Sylvain Pataille
Sylvain Pataille, a fortysomething vigneron in Marsannay, is undoubtedly one of the most exciting revelations of this area in recent times. He’s no recent arrival, though, he just knew how to be patient, start small, and grow: from 1 hectare in 1999, the estate now has 17... The estate was certified organic in 2008, but Pataille lost his certification in 2016, to his great chagrin,...
