A 100% Chardonnay cuvée, from an estate certified organic in 2014, and now in conversion to biodynamics. From a single 3-ha parcel of vines, planted in 1985 in the Coteaux de Dijon area, on clay-limestone and pebbly soils. Once a flourishing wine region, today it’s as if the Gobi desert surrounded the estate. The upside is… Marc has zero pesticide spraying neighbours! Yields are around 25 hl/ha. Vinification: non-interventionist, direct pressing, settling of the juices and batonnage during alcoholic fermentation, a pinch of sulphur at bottling, and 16 months of maturation in barrels, with 50% new oak.
