Well-integrated ageing allowing the nose to open on notes of candied lemon, biscuit, sea breeze, and a lovely minerality. On the palate, the wine is crystalline, vertical, taut and refined, with a long, saline finish — the sensation of licking the stones and fully experiencing the terroir.

Chardonnay from old vines farmed as cleanly as possible (non-certified organic), planted in 1989 on a 2 ha parcel with light, shallow soils (10–30 cm), clay-limestone, with hard limestone stones. South-east exposure, a sunny terroir. Hand-harvested in small crates. Vinification: long direct pressing, light settling, then transferred into casks for fermentation and long ageing in 600-liter demi-muids with little new oak. Six months of ageing in tank before bottling, sensible use of sulphur.
