Pinot Noir from the Estate's vines, planted on an isolated plot surrounded by forest at an altitude of 350m, just above the Premier Cru "Aux Guettes". Organic farming, with herbal medicine, the soil is plowed by horse (by Melaine, a young horse trained at Chandon de Briailles). Manual harvest, vinification in whole bunches, wetting of the marc with a watering can, punch downs, aging in barrels of several wines for 13 months on fine lees, second winter of aging in stainless steel tank. Not fined, not filtered, just a micro-dose of sulphur.

Tomoko et Guillaume
Tomoko Kuriyama and Guillaume Bott form the magical duo of Chanterêves. As a couple both in life and in the vineyard, they established their Maison de vins in 2011, an haute-couture négoce based in Savigny-lès-Beaune, nowadays also an Estate with their own vines. Tomoko is originally from Japan, and was exposed to wines from a very young age, having her father passionate by great Burgundy...
