100% Pinot Noir from nearly 40-year-old vines, farmed biodynamically and planted on a clayey-limestone loam soil. Grapes are handpicked and mostly destemmed, fermented in open wooden vats for 18 days, with some pumping over and traditional punching of the cap. Next comes the blending of free-run wines and first press wines, settling of the must, and racking into barrels. Matured for 12 months in barrels that have seen three wines. Decanting is recommended.
