100% Gamay, from vines farmed organically and planted in two metres of clay over a base of three metres of pink and black granite. The grapes are harvested by hand, and carefully inspected on the sorting table, with yields of 30 hl/ha. Vinification: carbonic maceration for five days, blending of free run juice and press juice for alcoholic and malolactic fermentation. 14 months maturation in conical wooden vats that have seen several wines. Neither fined nor filtered, with zero sulphur.
Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001. Founded in 1952 by his grandfather Pierre, the Clos has never seen the use of chemicals, and has always been cultivated with the greatest respect for the earth.
