Volnay "Sur Roches" - 2019 - Maxime Dubuet Boillot
Domaine Dubuet Boillot
A nose that reflects all the character and elegance of Volnay, with notes of dried strawberry, peony, morello cherry and a hint of mocha... Palate: beautiful concentration, tannic structure, and length with a seemingly endless succession of aromas. Fine ageing potential.

100% Pinot Noir, from vines planted in 1953 on a 0.8-hectare plot with a fairly steep slope, scattered rock outcroppings, and abundant pebbles and limestone scree which provides good drainage for the soil. The grapes are harvested by hand and sorted in the cellar, with only the best fruit used to produce the Sur-Roches cuvée. Vinification: whole grape bunches are fermented 20 days in vats, with pumping over and punching down of the cap, followed by gentle pressing and settling by gravity. Matured for 18 months in oak barrels, 30% of which are new.

Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
