100% Pinot Noir from the 2018 vintage, vines cultivated organically and planted in the Aube region: from “similar neighboring vineyard sites facing North”. The grapes are pressed in a traditional Coquard vertical press. Vinified and matured in wood, with indigenous yeasts, disgorged on the 18th of October of 2020, with traditional ‘flying’ disgorgement, and zero dosage. The purpose of this cuvée is to capture the impact of the exposure in the bottle since it is the same grape variety, harvest and vinification than Les Semblables Austral.
Hélène and Bertrand Gautherot, two natural winemakers in Champagne, are the owners of Vouette & Sorbée, named after the estate’s two main vineyards. Their story begins in the 1990s, when between 1993 and 1999, they weren’t even making wine, but producing organic grapes which they sold to the local wine co-op.
