An extremely complex nose, with notes of candied apricot, fig, salted butter caramel, and honey... The palate is a work of exquisite craftsmanship, without a trace of heaviness, with aromas of aromas of fruit and barrel aging, and a long finish. A 35cl bottle.

A cuvée made from the small Botsi pear, a variety native to the region of Fribourg, from organically grown pear trees. Like an ice wine, over-ripe fruit is allowed to freeze on the branches which concentrates the sugars. They are then picked by hand, pressed and matured in barrels that have seen several wines.

Jacques Perritaz, a biologist by training, was on a research trip the day he uncovered the little-known – if not forgotten – fruit cultivating heritage of the canton of Fribourg, Switzerland. The discovery inspired him to start a new mission – to revitalise the canton’s artisanal fruit traditions and promote the lasting preservation of its landscape and varietal heritage.
