Cidre de Fer - 2018 - Jacques Perritaz

A nose with notes of pear, dry sherry, and sweet fruits just roasted in the oven ... Palate: an extra dry cider, slightly salty, with fine bubbles, and a finish with a touch of the Fer apple’s tannins, and subtle bitter notes. A great success.

A cuvée made from the Fer (literally ‘iron’) apple, an ancient variety discovered in Germany at the end of the 19th century, made from apple trees grown organically and planted in the Valais, on brown clay soils over schist. The apples are picked by hand, followed by partial fermentation with indigenous yeasts and coarse filtration to attain the desired amount of residual sugar. Secondary fermentation in the bottle, with a microdose of sulphur.
