Neige is a must-have brand in Canada... All the stars are entitled to their glass during their visit: Barack Obama, Prince William.... And even Robert Parker says it is a world class product.
ORCHARD: Located in Monteregie, on the border of New York State. In the past, the Champlain Sea covered the rocky soil.
CLIMATE: Ideal micro climate. Sunny days in the fall and cool nights. Long and very cold winters.
METHOD: Hand-picked between December 2012 and February 2013, when the temperature was around -15°C, the fruit left hanging on the trees was then dehydrated by the sun and literally cooked by the cold and wind. The sugars were concentrated by natural cryoextraction. The apples were pressed frozen to extract the precious nectar. The collected must was then placed in stainless steel vats, where it fermented for 8 months, at low temperature, before being bottled.
YIELD: 1 liter = about 6 kg of selected apples SUGAR: 404 g/l before fermentation, 190 g/l residual
ACIDITY: 7.9 g/l
Apples used: Fuji, Pouliot, Golden Russet, Honey Gold and Primavera.
Serve around 6°C - Can be aged until 2025 - 37,5 cl bottle
