A nose with beautiful notes of barrel ageing, with aromas of salted butter caramel, candied fruits, dried apricot, and a hint of hazelnuts in the shell... The bubbles are fine, the palate long, soft and full, with beautiful structure, a dry / brut perry with incredible length.

A blend of eight different varieties of pears, including the Gelbmoster, from untreated century-old trees grown organically. The trees are planted randomly across cow or sheep pastures in the canton of Fribourg, on brown clay soils over schist. The pears are picked by hand, followed by partial fermentation with indigenous, secondary fermentation in the bottle, and just a microdose of sulphur.
