The estate's flagship cuvée, an extra-dry cider with notes of white flowers. An invigorating palate – this not your typical fruity, sweet cider… a big saline attack, lovely acidity, a firmness from the quince, and light tannins. Try pairing with raw fish or seafood.

Blend: 1/3 pears, 1/3 apples and 1/3 quinces, picked by hand from trees grown organically, on a typical Valais terroir: brown clay soils over schist. Cider made according to the "guillage" technique, fermentation with indigenous yeasts of the juices in barrels which pushes the unwanted foam out of the barrel. Followed by two to three very gentle filtrations to attain the desired amount of residual sugar, secondary fermentation in the bottle, and a microdose of sulphur.
