2001 Bio - Fins Bois - Cognac Grosperrin
Straw color. A beautiful Fins Bois of eighteen years of age with its greedy notes of fresh fruit and citrus. On the nose, notes of peach skin, apricots. On the palate, the freshness and naturalness of this Cognac are striking. We find these fruity notes, but they are prolonged by more complex aromas, like those of a bouquet of dried flowers forgotten on a table on a summer day. The finish amplifies these floral notes (daffodil, narcissus), quickly covered by more obvious notes of grapes, orange zest and fresh spices.

This vintage Cognac comes from a farm of about twenty hectares of vines called « La Petite Chapelle », located in the commune of Champmillon. The two plots that produced this Cognac have been cultivated organically since 1990 by a single woman, who took over her father's activity when he died. It is therefore one of the oldest organic productions in the Cognac region, which counts about sixty organic farms today (out of about 5000 !), some of them are very small. This Cognac was aged in the small old cellar of the farm, whose walls were semi-buried. The barrels could not be removed with the eau-de-vie because the door was closed. It was therefore necessary to enter through the window and pump the batch into a tank, which was done in the presence of a bailiff.
