A 100% Vermentino vintage from organically grown vines planted on granitic soils in the village of Casta, north of Corsica. Manual harvesting. Vinification : 80% direct pressing, natural cold settling for 24 hours, racking of the clear juice by gravity, all with indigenous yeasts. 20% in skin contact maceration for 24 hours. Six months of maturation on fine lees in stainless steel vats. Not fined, nor filtered, just a micro-dose of sulfur during bottling at the Estate.
