A 100% Sciaccarello Rosé from organically grown vines planted on granitic soils in the village of Casta, North of Corsica. Manual harvesting, sorting of the grapes in the vineyard, controlled yields. Natural vinification without inputs: direct pressing, cold settling for 24 hours, racking of the clear juice by gravity, slow fermentation in stainless steel vats, 6 months of maturation on lees. Not fined or filtered, bottled at the Domaine with a micro dose of sulfur.
