Cuvée 100% Cabernet Franc from Adelaide, planted on soils of black sand over petrified schist, grown at Robert Surmann's Vineyard, a farm that converted to organic agriculture six years ago. The vinification is natural and without artifice: the grapes are destemmed, followed by 10 days of carbonic maceration, then fermentation and maturation in 100-year-old barrels of Australian Jarra wood. ZERO sulphur added, and no filtration.
