100% Chardonnay from vines planted in the village of Piccadily, in the Adelaide region of southeast Australia. The grapes are harvested by hand, sorted in the vineyard, followed by direct pressing, racking into barrels, fermentation with indigenous yeasts, and maturation on fine lees for 10 months in barrels, with a little stirring of the lees. Only four barrels produced, one of which is new oak. Neither filtered nor fined, and bottled in December 2018 (southern hemisphere!) with just a micro-dose of sulphur.
