The winemaker is located in the region of Trentin, in northeast Italy. Her wine is the product of respectful, non-interventionist viticulture. This grape variety, Teroldego, is cultivated on a sandy clay soil. The vines are 50 years old. The grapes are de-stemmed. The maceration, fermentation and maturation take place in 450-litre clay amphorae over 8 months! Next, the wine is racked and matured 3 months in acacia wood barrels. New wood is forbidden. A very light dose of sulphites at bottling.
